Las Capucas is situated on and around the Celaque mountain, which is the highest peak in Honduras. It was founded in 1999 by Jose Omar Rodriguez who’s currently still the general manager. For this particular lot coffee cherries are submerged in water to ferment for 72 hours before being moved to the solar dryer for a slow drying process
